Ingredients

1 kg tiny potato , skins on , halved
2 tablespoons olive oil
salt and pepper
3/4 cup light sour cream
2 tablespoons Thai sweet chili sauce
2 green onions , chopped
1/4 cup fresh coriander leaves
1 tablespoon toasted sesame seeds

Instructions

1.Preheat oven to 200°C.
2.Place halved potatoes on a baking tray. Drizzle with olive oil, salt, and pepper. Toss to coat evenly.
3.Roast in the oven for around 25 to 30 minutes, until the potatoes are tender and crispy.
4.In a small mixing bowl combine sour cream and Thai sweet chili sauce.
5.Once the potatoes are cooked, remove from oven and allow to cool for a minute.
6.Mix the roasted potatoes together with chopped green onions and fresh coriander leaves in a large mixing bowl.
7.Add in the sweet chili sour cream. Toss to coat evenly.
8.Sprinkle with toasted sesame seeds. Serve warm.
