Ingredients

500 g scrubbed new baby potatoes
6 eggs
500 g asparagus spears
1 cup of fresh mint
1 orange , juice and zest of
6 tablespoons extra virgin olive oil
salt & freshly ground black pepper
Warm New Potato Salad - New Zealand is a delightful warm salad made with fresh baby potatoes and asparagus, dressed with orange juice, zest, fresh mint and extra virgin olive oil for the perfect balance of flavors. Instructions

1.Cut the baby potatoes in half, place them in a pot of salted water and bring to a boil. Cook for 10-15 minutes, or until tender.
2.While the potatoes are cooking, boil the eggs for 6 minutes, then transfer them to a cold water bath to cool. Once cooled, peel and set them aside.
3.Trim the woody ends of the asparagus, then blanch them in a pot of salted boiling water until just tender. Remove from heat and immediately plunge them into a bowl of ice water to stop the cooking process. Drain and set aside.
4.To make the dressing, mix together the fresh mint, orange zest, orange juice, olive oil, salt and pepper in a bowl.
5.Combine the potatoes, asparagus and dressing in a large mixing bowl. Toss until everything is evenly coated.
6.Slice the boiled eggs and add them to the salad just before serving.
