Ingredients

500 g lamb backstraps
1 tablespoon cumin
1/2 teaspoon black pepper
1/2 teaspoon salt
2 cups couscous
1 tablespoon butter
3 cups chicken stock , boiling
2 tomatoes , seeded , finely diced
1/2 green capsicum , finely diced ( bell pepper )
3 pieces preserved lemons , flesh discarded , rinsed , finely diced
2 tablespoons mint , chopped
2 tablespoons olive oil
2 tablespoons pomegranate molasses
This Warm Lamb and Couscous Salad Recipe is a perfect choice for a healthy and light dinner option. Instructions

1.Preheat the oven to 200C.
2.Combine the cumin, salt, and pepper in a small bowl, then rub it all over the lamb.
3.In a large pot, melt butter over medium heat. Add couscous and stir well to coat with butter. Pour in the boiling chicken stock, reduce the heat to a simmer, and cover tightly. Allow for thirty minutes without disturbing the pot.
4.To make the salad, take a mixing bowl and combine the diced tomatoes, green capsicum, and finely diced preserved lemons. Let this sit for about ten minutes and then add the mint.
5.Roast the lamb for 20 minutes or until cooked to your liking. Allow it to cool for a while before slicing the lamb thinly against the grain.
6.Mix the olive oil with the pomegranate molasses in a separate bowl.
7.To serve, toss the couscous with the salad, put sliced lamb on top of the couscous-salad mixture, and drizzle the pomegranate dressing over it all.
