Ingredients

1 tablespoon olive oil
2 eggplants , sliced in half
1/3 teaspoon mustard seeds
2 bay leaves
2 green chilies , minced
1 tablespoon fresh ginger , grated
1 onion , diced
2 tomatoes , chopped
1/2 teaspoon turmeric
1/2 teaspoon chili powder
1/2 teaspoon mango powder ( optional )
1/2 teaspoon cumin
1/2 teaspoon garam masala
1 teaspoon fenugreek leaves
1 dash salt , to taste
1/2 teaspoon lemon juice

Instructions

1.Preheat oven to 375°F (190°C).

7.Add turmeric, chili powder, mango powder (if using), cumin, garam masala, and fenugreek leaves.
8.Stir and cook for 1-2 minutes before adding the chopped eggplant flesh.
9.Mix everything together and cook for an additional 5-10 minutes, or until the dip is heated through.
10.Remove from heat and stir in salt and lemon juice to taste. Serve warm.
