Ingredients

1 tablespoon olive oil
1 tablespoon balsamic vinegar
600 g lamb backstraps , trimmed
600 g butternut pumpkin , peeled , seeds removed , cut into 3cm wedges
olive oil flavored cooking spray
1 bunch asparagus , trimmed , cut into thirds
1 large red onion , cut into thin wedges
60 g baby rocket
35 g reduced-fat feta cheese , crumbled
Warm Balsamic Lamb Salad is a hearty salad that is perfect for the autumn and winter months when you crave warm comfort food. This recipe combines tender lamb backstraps, roasted pumpkin, asparagus, and red onion, and sprinkled with crumbled feta cheese and rocket leaves. Instructions

1.Preheat the oven to 200C/180C fan-forced.
2.Combine olive oil and vinegar in a small bowl. Season with salt and pepper.
3.Season lamb with salt and pepper. Heat a large ovenproof frying pan over high heat. Add lamb. Cook for 2 minutes each side or until browned. Transfer to a plate. Cover loosely with foil. Set aside for 5 minutes to rest.
4.Meanwhile, place pumpkin on a lined baking tray. Spray with cooking oil. Season with salt and pepper. Bake for 20 minutes.
5.Add asparagus and onion to pumpkin. Spray with cooking oil. Bake for 15-20 minutes or until vegetables are tender.
6.Thinly slice lamb. Divide rocket, lamb, pumpkin mixture and feta between plates. Drizzle with balsamic dressing. Serve immediately.
