Ingredients

2 tablespoons cooking oil
1 large yellow onion , cut into strips
1 small red onion , cut into strips
1/2 of a green pepper
1/2 of a red pepper
1/2 of a yellow pepper
0.25 can kernel corn
1/2 chicken bouillon cube
1/2 cup water
fajita seasoning mix , spice ( enough for your liking )
1 dash salt ( seasoning salt might actually work better )
1 1/2 - 2 cups chicken breasts , cut into strips
1 bag of plain tortilla chips
1/4 cup shredded sharp cheddar cheese
1 tomatoes , cut into small 1/16ths
1 piece parchment paper , to cover baking pan for oven . also for tranferring onto plate after baking
1 green onion , cut into 1/4 inch pieces

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, heat the oil over medium-high heat.
3.Add the yellow and red onions and cook until softened and slightly caramelized, stirring occasionally, about 5 minutes.
4.Add the green, red, and yellow peppers and cook until they start to soften, stirring occasionally, about 3 minutes.
5.Add the corn, chicken bouillon cube, water, fajita seasoning mix, salt, and chicken strips. Cook until the chicken is no longer pink, stirring occasionally, about 7-8 minutes.
6.In a baking pan lined with parchment paper, spread the plain tortilla chips in an even layer.
7.Spoon the chicken and vegetable mixture over the tortilla chips.
8.Sprinkle the shredded sharp cheddar cheese over the top of the chicken and vegetable mixture.
9.Bake in the preheated oven for 7-8 minutes or until the cheese is melted and bubbly.
10.Remove from oven and sprinkle the small, sliced tomatoes and green onions over the top of the nachos.
11.Serve with your favorite salsa or sour cream on the side.
