Ingredients

200 g spaghetti
200 g baby spinach leaves , washed well and roughly chopped
50 g gorgonzola ( I do n't like either of these , so I used 1 tablespoon parmesan and 2 tablespoons Greek yoghurt ) or 50 g blue cheese ( I do n't like either of these , so I used 1 tablespoon parmesan and 2 tablespoons Greek yoghurt )
1/2 ripe pears , peeled , cored and very thinly sliced or 1 granny smith apple , cored and very thinly sliced
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 cup walnuts , shelled , roughly chopped
1 teaspoon lemon juice
fresh ground black pepper , to taste
Walnut & Pear Spaghetti is a savory and unique pasta dish, perfect for pasta lovers looking to try something new. Instructions

1.Cook spaghetti according to package instructions, until Al Dente.
2.Reserve 1/2 cup of pasta cooking water and drain spaghetti.
3.In a large skillet, toast walnuts over medium heat for 3-4 minutes until fragrant. Remove from pan.
4.In the same skillet, add thyme, sage, black pepper and spinach. Cook until the spinach is wilted, approximately 2-3 minutes.
5.Add sliced pears to the pan, cooking for an additional minute.
6.Add cooked spaghetti, lemon juice, gorgonzola/blue cheese/parmesan and Greek yoghurt. Mix thoroughly until the cheese has melted and the ingredients are well combined.
7.If needed, use reserved pasta water to thin the sauce.
8.Add walnuts right before serving, sprinkle some extra parmesan cheese, and enjoy!
