Ingredients

30 g butter
2 carrots , finely diced ( or grated )
2 teaspoons ground cumin
4 large spring onions , sliced finely ( scallions )
250 g mushrooms , coarsely chopped
3 eggs , lightly beaten
1 cup tomato puree
1/2 cup cheese , grated
1/2 cup walnuts , chopped
2 tablespoons parsley , finely chopped
1 1/2 teaspoons salt ( or to taste )
1/2 teaspoon black pepper
2 1/2 cups cooked brown rice
1 cup dry white wine
2 spring onions , chopped
2 tablespoons lime juice ( OR 1 tablespoon lemon juice )
1/2 teaspoon grated lime rind ( or lemon rind )
100 g butter , softened
2 tablespoons chives , chopped
sea salt , to taste
white pepper , to taste
The Walnut and Rice Loaf with Chive Sauce is a healthy and delicious vegetarian dish that is sure to impress your guests. Instructions

1.Preheat the oven to 180C or 356F.
2.Melt the butter in a pan over medium heat. Add the carrot, cumin and spring onions and cook for 5 minutes or until softened.
3.Add the mushrooms and cook for 5 minutes or until they are browned.
4.Remove from heat. Add the eggs, tomato puree, cheese, walnuts, parsley, salt and pepper. Stir well.
5.Add in the cooked brown rice and stir well.
6.Transfer the mixture into a greased loaf tin. Bake for 30-40 minutes.
7.To make the chive sauce, heat the white wine in a pan over medium heat. Add in the spring onions.
8.Boil until the liquid reduces by half.
9.Add in the lime juice, lime rind and butter. Cook until the butter melts.
10.Add the chives, salt and pepper to the pan. Stir well.
11.Serve the loaf slices with the chive sauce.
