2 zucchini ( about 10 inches long )
1/4 cup sherry wine
2 tablespoons olive oil
1 cup chopped onion
2 cloves garlic , minced
2 tablespoons tomato paste
1 can chopped tomatoes with juice
1 teaspoon minced fresh oregano or 1 1/2 teaspoons dried oregano
1/4 teaspoon ground cinnamon
2 -4 tablespoons dry sherry
salt & fresh ground pepper
1 cup chopped onion

Instructions

1.Preheat the oven to 375°F.

3.In a large skillet over medium heat, add 2 tablespoons olive oil, chopped onion, and minced garlic. Cook until the onion is tender, and the garlic is fragrant, which should take around 3-4 minutes.
4.Add tomato paste and chopped tomatoes with juice, then stir to combine. Cook for 5-7 minutes, stirring occasionally.
5.Add fresh oregano, ground cinnamon, dry sherry, salt, and pepper. Stir and cook until the liquid evaporates entirely.
6.In another skillet, add 1 tablespoon of olive oil, chopped onion, garlic, toasted walnuts, crumbled feta cheese, currants or raisins, and lemon juice. Cook for 3-4 minutes, stirring occasionally.
7.Add two cups of cooked brown rice and bread crumbs to the second skillet. Stir to combine.
8.Divide the mixture evenly amongst the four zucchini halves, and sprinkle some grated feta cheese on top.
9.Place the stuffed zucchini in the baking dish and drizzle with a small amount of olive oil.
10.Cover with foil and bake for 20 minutes. After 20 minutes, remove the foil and bake for another ten minutes.
