5 lbs lean beef ( approximate )
5 cups water
3 tablespoons pepper
1 tablespoon onion salt
1 tablespoon msg
1 tablespoon dry mustard
1/2 cup Hi Mountain hickory blend jerky cure ( You can also use Morton 's Tender Quick Home Meat cure )
2 tablespoons paprika
1/3 cup unbleached cane sugar ( do not substitute )
1 tablespoon garlic salt
1/3 cup Worcestershire sauce

Instructions

1.Trim all fat from the beef, and slice into thin strips.
2.In a large mixing bowl, whisk together the water, pepper, onion salt, msg, dry mustard, jerky cure, paprika, cane sugar, garlic salt, and Worcestershire sauce.
3.Place the beef strips into the marinade and make sure that every piece is coated.
4.Cover and refrigerate for a minimum of 4 hours, but preferably overnight.
5.Remove the beef from the marinade and place on paper towels to dry.
6.Preheat your oven to 175°F, and line your baking sheets with parchment paper.
7.Arrange the beef strips on the parchment paper and place in the oven for 6-8 hours or until dried to your desired texture.
