Ingredients

1 egg yolk
1/2 cup plus 2 tbspns peanut oil
1/4 cup buttermilk
1/4 cup Greek yogurt
2 -3 spring onions , finely chopped
1 large lemon , Juice of
2 garlic cloves , finely chopped
salt & freshly ground black pepper , to taste
500 g mixed salad greens , lettuces ( include a good quantity of cos in the mix , it provides a good strong leaf )
1 red onion , sliced
3 sticks celery , finely sliced
3/4 cup walnuts , toasted
1 granny smith apple , thinly sliced
1 raw medium beetroot , peeled and grated
The Waldorf Salad was created in the late 1800s at the Waldorf-Astoria hotel in New York City. The original recipe contained only apples, celery, and mayonnaise. Over time, the recipe changed, and new ingredients were added, like grapes and walnuts. Our version of the Waldorf Salad introduces a tangy buttermilk dressing that complements the sweet and savory flavors of the salad. The end result is a delicious and satisfying meal that can be enjoyed any time of day.

Instructions

1.Start by making the buttermilk dressing. In a large bowl, whisk together the egg yolk, 2 tablespoons of peanut oil, buttermilk, Greek yogurt, spring onions, lemon juice, garlic, salt, and pepper until the mixture is creamy and well combined.
2.In another large bowl, combine mixed salad greens, red onion, celery, and toasted walnuts. Toss to combine all the ingredients.
3.Pour the buttermilk dressing over the salad mixture and continue to toss until all the ingredients are well coated.
4.Add thinly sliced apple and grated beetroot to the salad mixture and gently toss.
5.Serve immediately or chill in the fridge for up to 1 hour before serving.
