2 bunches fresh broccoli
3 lbs medium shrimp , peeled and deveined but tail segment intact
3 egg whites
1/4 cup water
1 cup cornstarch
2 cups all-purpose flour

white pepper , to taste
vegetable oil ( for deep frying )
2 tablespoons peanut oil , for stir frying
4 tablespoons fresh ginger , finely chopped
2 teaspoons red pepper flakes , crushed
2 garlic cloves , peeled and minced
1 cup dry white wine
2 tablespoons hoisin sauce
3 tablespoons honey
4 tablespoons tomato paste
2 tablespoons chinese oyster sauce
2 cups chicken stock or 2 cups fish stock
1 1/2 tablespoons cornstarch
3 tablespoons red wine vinegar
salt
white pepper , to taste
1/2 cup whole scallion , finely sliced

Instructions

1.In a large pot, steam the broccoli for 5-7 minutes or until tender. Set aside.
2.In a mixing bowl, whisk together the egg whites and water until frothy.
3.In a separate bowl, combine the cornstarch, all-purpose flour, salt, and white pepper.
4.Dip the shrimp in the egg white mixture, then coat in the flour mixture.
5.Heat the vegetable oil in a wok or deep frying pan to 350°F.
6.Fry the shrimp in batches for 2-3 minutes or until golden brown and crispy. Drain on paper towels.
7.In a clean pan, heat the peanut oil over medium heat. Add the ginger, red pepper flakes, and garlic.

9.Add the white wine, hoisin sauce, honey, tomato paste, oyster sauce, and chicken or fish stock. Stir well.

12.Simmer the sauce until thickened, about 5-7 minutes. If the sauce is too thick, thin it out with a little more chicken or fish stock.
13.Pour the sauce over the steamed broccoli and top with the fried shrimp.
14.Garnish with sliced scallions and serve hot.
