Ingredients

3 1/2 lbs cherries , pitted
5 teaspoons brewer 's yeast
3/4 cup white sugar or 3/4 cup brown sugar
2 tablespoons white sugar or 2 tablespoons brown sugar
6 tablespoons raisins
Vishnyovy Kvas, or Cherry Kvass, is a traditional Russian fermented drink that is perfect for summer. It's a low-alcohol beverage that is made by fermenting cherries with sugar and yeast. The natural fermentation process gives it a tart and slightly sweet taste and a light fizz. Instructions

1.Rinse the cherries and remove the pits
2.In a large sterilized jar, add the cherries, sugar, and raisins. Fill the jar with filtered water leaving a little space at the top
3.Cover the jar with cheesecloth and let it sit for 24 hours in a warm place
4.After 24 hours, remove the cheesecloth, add the yeast, and stir gently
5.Cover the jar with a tight-fitting lid and let it sit in a cool dark place for 2-3 days
6.Once the kvass is ready, strain it through a fine mesh strainer or cheesecloth and discard the solids. Transfer the kvass to bottles and chill in the refrigerator
