Ingredients

50 g softened butter
250 g vintage cheddar cheese , sliced
2 medium aubergines , sliced
4 tablespoons olive oil
1 pinch chili flakes
1 pinch cumin seed
1 teaspoon smoked paprika
1 lemon , juice of
1 red onion , sliced into rings
rocket
8 slices of thick cut granary bread
4 tablespoons mango chutney

Instructions

1.Preheat the grill to high.
2.In a pan, heat the olive oil over medium heat and add the aubergine. Cook for 6-8 minutes or until tender. Add the chili flakes, cumin seed and smoked paprika, toss well and remove from heat.
3.Toast the bread under the grill.
4.Butter each slice then add a slice of cheddar cheese to four of the pieces. Under the grill, melt cheese on the bread with cheddar.
5.To the other slices, add a tablespoon of mango chutney and a few slices of pickled red onion followed by the spiced aubergine and some rocket.
6.Press the two slices together and serve immediately.
