12 shrimp ( peeled-deveined-cut in 1/3s )
4 flour tortillas
1 cup half-and-half
1 1/2 tablespoons chipotle chiles in adobo
1 avocado ( peeled and sliced-optional )
1/4 cup cilantro ( chopped-optional )

Instructions

1.Preheat your oven to 350°F.
2.Heat 2 tablespoons of oil in a pan on medium heat.
3.Add chopped onions and sauté until golden brown.
4.Add in the 12 chopped shrimp and cook for about 1-2 minutes. Set aside.
5.In a separate saucepan, heat 1 1/2 tablespoon of chipotle chiles in adobo on medium heat.
6.Pour in 1 cup of half-and-half, stirring continuously for a few minutes.
7.Add in 4 ounces of chevre cheese and continue stirring until the mixture is smooth.
8.Add salt and pepper to taste.
9.Heat 1 teaspoon of oil and lightly cook flour tortillas until they are slightly golden brown.
10.Fill each tortilla with a spoonful of the shrimp mixture and roll it up to make an enchilada.
11.Place the enchiladas in a baking pan and pour the chipotle-cream mixture over them.
12.Bake the enchiladas in the oven for 12-15 minutes.
13.Garnish with sliced avocado and cilantro (optional)
