Ingredients

1 large truffle
1 small truffle
1 large roasting chicken
2 tablespoons butter
8 leeks , white part only , washed well
8 young carrots
2 cups dry white wine
6 cups chicken stock
1/2 teaspoon salt
1/2 teaspoon peppercorn
1/4 cup butter
1/2 cup flour
1 small onion
3 cloves
1 small carrot
1 tablespoon cold butter
3 egg yolks
1/2 teaspoon fresh lemon juice
salt & freshly ground black pepper , to taste

Instructions

1.Preheat oven to 350°F (175°C).
2.Chop one large truffle and one small truffle into small pieces and set aside.
3.Stuff the chicken with the large truffle and 2 tbsp butter. Close the cavity using toothpicks and string.
4.Tie the chicken legs and wings together using kitchen twine.
5.Place the chicken in a roasting pan with leeks, young carrots, white wine, chicken stock, salt, and peppercorns.
6.Cover the roasting pan with foil and bake for 1 hour.
7.Remove the foil and continue baking for another 30 minutes or until the chicken is golden brown.
8.Melt 1/4 cup butter in a saucepan, stir in the flour, onion, cloves, and small carrot. Cook for 5 minutes or until the mixture turns light brown.
9.Strain the broth from the roasting pan into the saucepan and cook until the sauce thickens.
10.Beat the egg yolks and fresh lemon juice in a separate bowl. Slowly stir in the hot sauce mixing well.
11.Return the mixture back to the saucepan and cook until heated through. Do not boil.
12.Stir in the chopped truffles. Season with salt and freshly ground black pepper.
13.Remove the string and toothpicks from the chicken. Cut the chicken and serve with the truffle sauce.
