Ingredients

4 lbs ducklings
1/2 cup soy sauce
1/2 cup peanut oil
1/2 cup canned purple plums , pitted , skinned , and mashed ( syrup liquid reserved to equal 1/2 cup )
6 slices fresh ginger
1/3 cup chopped green onion top
1 garlic clove , mashed
2 2 tablespoons Chinese duck sauce ( optional , original recipe called for `` Chinese sweet sauce '' ) or 2 tablespoons brown sugar ( optional , original recipe called for `` Chinese sweet sauce '' )
1/4 teaspoon salt
1 -2 tablespoon cornstarch
2 tablespoons plum juice
This recipe comes from actor Vincent Price and his wife Mary, which shows their influence in Chinese cuisine. The purple plum duck is particularly famous in Beijing and Northern China, and often prepared in the winter season. The soy sauce, peanut oil, and the plum mixture give the duck a unique taste. Instructions

1.Preheat oven to 300°F.
2.Rinse the duck with cold water and pat thoroughly dry with paper towels.
3.Brush the surface of the duck inside and outside with soy sauce and peanut oil.
4.Combine the mashed purple plums, ginger, green onion, garlic, duck sauce, plum juice, salt and cornstarch.
5.Stuff the mixture into the duck's cavity.
6.Place the duck on a wire rack in a roasting pan with the breast side up, cover the duck with foil and place in the oven.
7.Roast for 2 1/2 hours, basting the duck every half hour with the reserved syrup liquid and turning over about halfway through the cooking.
8.Remove the foil and cook for an additional 10-15 minutes, or until the skin is crispy.
9.Take it out of the oven and let it rest for 10 minutes before slicing and serving.
