1 frying chicken , cut up
salt & pepper
1 teaspoon dry rub seasonings , mccormick turkey rub
1/2 teaspoon thyme
1/4 teaspoon oregano
1 onion
1 leek
2 carrots
1 swede ( rutabaga )
4 slices bacon
2 tablespoons butter
2 tablespoons flour
1 bottle beer or ( 12 ounce ) bottle ale
8 ounces mushrooms , thinly sliced

Instructions

1.Preheat oven to 375°F.
2.Season chicken pieces with salt, pepper, dry rub seasoning, thyme, and oregano.
3.Cut onion, leek, carrots, and swede into small pieces and set aside.
4.In a large dutch oven or oven-safe pot, cook bacon until crispy then remove and set aside.
5.Add butter to pot and brown chicken pieces on all sides.
6.Remove chicken and set aside.
7.Add onions, leeks, carrots, and swede to the pot and cook for 5-7 minutes until softened.
8.Add flour to the pot and stir to create a roux.
9.Gradually add in beer or ale, stirring constantly to prevent lumps from forming.
10.Add mushrooms and crispy bacon.
11.Return chicken to the pot and bring to a simmer.
12.Cover the pot and place it in the preheated oven for 1 - 1.5 hours, until the chicken is tender and the vegetables are cooked through.
