Instructions

1.In a large mixing bowl, combine the ground pork, 1 tablespoon of sugar, soy sauce, minced garlic, and a pinch of salt. Mix well.
2.Roll the meat mixture into small meatballs, about 1 tablespoon each.
3.In a saucepan, combine 1 cup of water, the vietnamese fish sauce, 2 tablespoons of sugar, lime juice, minced garlic, and red pepper flakes. Bring to a simmer and cook, stirring occasionally, until the sugar has dissolved.
4.Heat a skillet over medium heat, add the meatballs, and cook, stirring occasionally, until browned on all sides and cooked through.
5.In a large bowl, toss together the cooked rice vermicelli, thinly sliced cucumber, matchstick-cut carrots, chopped cilantro, and peanuts.
6.To assemble the dish, divide the vegetable mixture into individual serving bowls, top with the meatballs and a generous drizzle of the fish sauce mixture. Serve with a side of chopped iceberg lettuce, scallions, and sriracha garlic sauce.
