Ingredients

1 rump steak or ( 500 g ) rib steak fillets
2 tablespoons dry sherry
200 g lump sugar
1 tablespoon coriander seed
1 tablespoon white peppercorns
1 tablespoon sea salt
2 tablespoons fish sauce
2 tablespoons water
1 garlic clove , crushed
1 small hot chili pepper , seeded and finely chopped
2 tablespoons lime juice
1 tablespoon sugar
1/2 cup fresh coriander leaves
1/2 cup mint leaf
1/4 cup vietnamese mint leaf ( optional )
1 cup bean sprouts
1 lebanese cucumber , sliced
100 g rice vermicelli , soaked in boiling water
This Vietnamese Sugar Cured Beef Salad is inspired by traditional Vietnamese cooking techniques, which use sugar to cure meat and add sweetness and flavor. This dish is refreshing and flavorful, with a variety of textures and flavors from crisp vegetables, tender beef, and chewy noodles. Instructions

1.Preheat oven to 150°C (300°F).
2.Place the steak fillets on a wire rack inside a baking dish.
3.In a small saucepan, combine the dry sherry and lump sugar. Cook over low heat, stirring constantly, until the sugar has dissolved.
4.Crush the coriander seed and white peppercorns together in a pestle and mortar, then add sea salt and stir to combine.
5.Pour the sugar and sherry mixture over the steak, sprinkle the spice mix evenly to the top of the beef.
6.Cook the steak in the oven for 1 hour, until it is tender and has absorbed the flavors from the sugar mixture.
7.Let the beef cool and then slice it thinly.
8.In a small bowl, whisk together the fish sauce, water, garlic, chili, lime juice, and sugar.
9.In a large bowl, combine the beef with the dressing, coriander, mint, vietnamese mint, bean sprouts, sliced cucumber, and soaked vermicelli noodles, toss until well combined.

CONS
