1 teaspoon black pepper , divided
2 tablespoons fish sauce , divided ( nuoc mam or nam pla )
1 teaspoon cornstarch
2 tablespoons vegetable oil or 2 tablespoons peanut oil , divided
4 cloves garlic , minced
6 ounces fresh baby spinach leaves , cleaned and dried ( about 4 cups worth ; or `` rau muong '' instead of spinach )
3 ripe roma tomatoes , sliced into thin wedges
hot cooked jasmine rice , for serving

Instructions

1.Thinly slice the beef and onion. Mix the beef with half teaspoon of black pepper, one tablespoon of fish sauce and cornstarch. Let marinate for at least 15 minutes.
2.Heat half of the oil in a large skillet over high heat. Add the beef and cook for 2-3 minutes until browned. Remove from the skillet.
3.Add the remaining oil to the skillet. Add the onions and cook for 2-3 minutes until they are softened.
4.Add the garlic, remaining half teaspoon of black pepper, and remaining tablespoon of fish sauce. Cook for 30 seconds until fragrant.
5.Add the spinach to the skillet. Cook for 1-2 minutes until the spinach is wilted.
6.Return the beef to the skillet. Add the tomatoes and cook for another minute. Serve over hot cooked jasmine rice.
