3 tablespoons peanut oil
5 tablespoons garlic , coarsely chopped
8 ounces soft salad leaves

Instructions

1.In a small bowl, whisk together the rice vinegar, chopped garlic, salt, pepper, sesame oil, peanut oil, sliced spring onions, fish sauce, soy sauce, sugar, and more pepper.
2.Heat the remaining peanut oil in a wok or large frying pan over high heat. Add the sliced beef and stir-fry for 2-3 minutes until browned.
3.Add the chopped garlic and continue to stir-fry for another 30 seconds, stirring constantly.
4.Remove from heat and add the salad leaves. Pour over the dressing and toss to combine.
5.Serve immediately, garnished with additional spring onions if desired.
