Ingredients

1 package dried rice noodles
2 carrots , julienned
1 cucumber , halved lengthwise and chopped
1/4 cup chopped fresh mint
4 leaves napa cabbage
1/4 cup unsalted peanuts
4 sprigs fresh mint

Instructions

1.Peel and finely chop the garlic. Put in a large mixing bowl.

4.Add julienned carrots, chopped cucumber, chopped mint, and napa cabbage to the bowl. Mix well.
