2 teaspoons peanut oil ( or canola oil )
2 heads bibb lettuce , separated into leaves
3 carrots , sliced into matchsticks
8 sprigs fresh cilantro , leaves only

Instructions

1.In a small bowl, whisk together the ginger, lime juice, sugar, and fish sauce to make the ginger-lime sauce. Set aside.
