Ingredients

2 tablespoons vegetable oil
12 ounces boneless pork tenderloin , sliced 1/4-inch thick and cut into 1/2-inch-wide strips
1/4 cup oyster sauce
3 tablespoons rice vinegar
2 tablespoons honey
1 tablespoon hoisin sauce
2 -3 teaspoons hot chili oil
2 teaspoons fish sauce ( nuoc nam )
1 egg yolk
9 small carrots , peeled and cut into feed tube lengths
6 large green onions , cut into feed tube lengths
4 ounces dried egg noodles
1 1/4 cups loosely packed fresh cilantro leaves
3/4 cup dry-roasted unsalted peanuts
Vietnamese noodles with pork and peanuts, or Bún thịt nướng, is a beloved dish in Vietnamese cuisine. Instructions

1.Cook the egg noodles according to the package directions.
2.In a small bowl, whisk together the oyster sauce, rice vinegar, honey, hoisin sauce, hot chili oil, and fish sauce until well combined.
3.Heat the vegetable oil in a large skillet over high heat. Add the pork and stir-fry for 1-2 minutes, until browned.
4.Add the carrots and green onions, and stir-fry for an additional 1-2 minutes, until the vegetables are just tender.
5.Push the pork and vegetables to one side of the skillet and add the egg yolk. Stir the egg yolk continuously until it begins to set, then stir it into the pork and vegetables.
6.Add the cooked noodles and sauce to the skillet and toss everything together until the noodles are well coated with sauce and heated through.
7.Remove the skillet from heat and stir in the cilantro and peanuts. Serve hot and enjoy!
