Ingredients

1 lb ham hock
6 stalks lemongrass , crushed and sliced thin
2 tablespoons nuoc nam
1 teaspoon sugar
1 teaspoon sea salt
1 teaspoon black pepper
4 ounces boneless sirloin
4 ounces boneless pork loin
16 ounces rice noodles , cooked
1 cup bean sprouts
4 sprigs Thai holy basil ( regular basil ok )
4 sprigs of fresh mint
4 sprigs fresh cilantro
4 teaspoons sambal oelek or 4 teaspoons hot chili sauce
4 -8 fresh Thai red chili peppers ( amount optional )
1 lime , cut into quarters
Bun Bo Hue is a spicy and flavorful soup that originates from the central region of Vietnam. The dish is made with a combination of thinly sliced beef and pork simmered for hours in a lemongrass-based broth. Instructions

1.In a large pot, bring 10 cups of water to a boil. Add ham hock, lemongrass, nuoc nam, sugar, salt, and black pepper, let simmer for 1 hour.
2.After 1 hour, remove ham hock and let cool. Shred the meat and add it back into the broth.
3.Slice sirloin and pork loin thin and add them to the pot. Cook for 3-5 minutes.
4.Cook rice noodles in a separate pot according to package instructions.
5.To serve, divide the noodles into 4 large bowls and top each bowl with the meat and broth. Add bean sprouts, basil, mint, cilantro, sambal oelek, and chili peppers to taste.
