Ingredients

1 egg white
2 teaspoons vegetable oil
1/4 cup chopped yellow onion , drained of excess water
3 shallots , minced
1 tablespoon fish sauce
1/4 teaspoon sea salt
1 tablespoon sugar
1 teaspoon minced garlic
1/2 teaspoon white pepper
2 tablespoons cornstarch
1/2 teaspoon baking powder
500 g medium raw shrimp , peeled , deviened and patted extremely dry
2 scallions , chopped
4 inches long sugar cane
Vietnamese Grilled Sugarcane Prawns, or Chao tom, is a traditional dish from Vietnam. It is a popular street food that has become a staple in Vietnamese cuisine. Instructions

1.In a medium bowl, whisk together egg white and vegetable oil.
2.Add in chopped yellow onion, minced shallots, fish sauce, sea salt, sugar, minced garlic, white pepper and mix until well combined.
3.Stir in cornstarch and baking powder to the mix.
4.Add in the medium raw shrimp, mix well and let it rest for at least 15 minutes.
5.Take a large bowl, pour in water and soak sugar cane sticks for 10-15 minutes.
6.Take a shrimp and wrap it around the sugar cane stick and repeat until all the shrimp are used.
7.Preheat a grill or a pan and cook the shrimp for 10-15 minutes on medium heat until golden brown and crispy.
8.Garnish with chopped scallions and serve hot.
