Ingredients

1 1/2 lbs chicken , any part , chopped into about 2-inch pieces , I prefer thighs bone in and skin , I chop each thigh into
2 tablespoons fresh ginger ( peeled and coarsely chopped )
2 tablespoons sugar
1/2 teaspoon black pepper ( to taste )
1 1/2 tablespoons fish sauce ( to taste )
1 tablespoon scallion ( green part only , chopped into 1/4-inch pices ) ( optional )

Instructions

1.In a bowl, mix together 2 tablespoons sugar, 1/2 teaspoon black pepper, and 1 1/2 tablespoons fish sauce.
2.Add 2 tablespoons chopped fresh ginger and mix well.
3.Add chopped chicken pieces and stir to coat the chicken well with the mixture.
4.In a pot, heat some cooking oil until hot and add the chicken mixture.
5.Cook over medium heat for around 20 minutes, stirring occasionally until chicken is cooked through and the sauce has thickened.
6.Garnish with green onions and serve with rice.
