Ingredients

1 1/2 lbs catfish or 1 1/2 lbs red snapper fillets , cut up into about 4 inch pieces
1/3 cup white sugar
1/4 cup fish sauce ( preferably Three Crabs Brand )
4 shallots , thinly sliced
1 tablespoon chopped fresh chili pepper
2 slices ginger , julienned
ground black pepper
Ca Kho To, also known as Vietnamese Fish Simmered in Caramel Sauce, is a traditional Vietnamese dish that is often home-cooked and enjoyed with rice. Red snapper fillets or catfish are cut into pieces and simmered in a sweet-and-salty caramel sauce, made with fish sauce and sugar. Instructions

1.Heat sugar in a small saucepan over medium heat. Swirl pan occasionally until sugar melts and turns into amber color.
2.Add fish sauce. The sugar will harden and bubble. Stir until sugar has dissolved.
3.In a medium-size clay pot or deep-pot, add fish, shallots, chili pepper, ginger and black pepper.
4.Pour sugar and fish sauce caramel over the fish and add enough water to just barely cover the fish.
5.Bring to a boil; lower heat to low and let it simmer for 15-20 minutes, or until the fish is cooked and the sauce is slightly thickened. Occasionally spoon the sauce over the fish.
