Ingredients

1 cup corn kernel
4 tablespoons thick coconut milk
1/4 cup all-purpose flour
1 teaspoon cornstarch
1/2 teaspoon salt
1 egg
corn oil ( for deep frying )
1 tablespoon vietnamese chili-garlic sauce or 1 tablespoon sriracha hot chili sauce
1 teaspoon water
1/2 teaspoon sugar
The Vietnamese Corn and Coconut Fritters, also known as Cha Bap Ran, is a tasty appetizer enjoyed widely in Vietnam. This savoury, sweet delicacy is popularly made during weddings, celebrations, and festivities but also enjoyed as a snack. The amazing mix of salty corn (bap) and sweet coconut milk (ran) makes it a perfect appetizer. These fritters can be enjoyed as is or served with sweet chili sauce (Nuoc Cham). These fritters take under 20 minutes to prepare and can be whipped up with ingredients that are easily accessible.

Instructions

1.In a mixing bowl, whisk coconut milk and eggs until smooth.
2.Add all-purpose flour, corn kernel, cornstarch and salt to the bowl and stir well.
3.Mix the Vietnamese chili-garlic sauce or sriracha hot chili sauce, sugar and water in a separate bowl.
4.Add the sauce mixture to the batter and mix well.
5.Preheat corn oil in a wok or frying pan for deep frying.
6.When the oil is hot, take one-fourth of the batter with a spoon and drop it into the oil. Repeat this until the wok is full of batter.
7.Ensure both sides turn golden brown. Drain them onto kitchen paper to remove excess oil.
8.Ready to serve. Serve hot and crispy with a sweet chili sauce dip.
