Ingredients

4 scallions , white part only , chopped fine
2 tablespoons fresh lime juice
1 1/2 tablespoons minced garlic

2 teaspoons grated fresh ginger
1/2 teaspoon salt
1/2 teaspoon pepper
2 lbs ground chicken
1/3 cup soy sauce
3 tablespoons fresh lemon juice
2 teaspoons sugar
1 1/2 teaspoons minuced garlic
1 1/2 teaspoons grated fresh ginger
1 teaspoon fish sauce
1/4 teaspoon hot chili-garlic sauce
scallions or fresh herb ( cilantro , basil , mint )
lettuce leaf , for wrapping

Instructions

1.In a large mixing bowl, combine the scallions, lime juice, garlic, vegetable oil, sugar, soy sauce, hot chili oil, ginger, salt, and pepper.
2.Add the ground chicken and mix well to combine.
3.Divide the mixture into approximately 24 small portions and form each portion around a skewer or toothpick.
4.Preheat your grill or grill pan to high heat. Place the chicken skewers on the grill and cook for 3-4 minutes on each side, or until cooked through.
5.In a small bowl, combine the soy sauce, lemon juice, sugar, garlic, ginger, fish sauce, and hot chili-garlic sauce to make a dipping sauce.
6.Serve the chicken skewers hot, garnished with scallions or fresh herbs and wrapped in lettuce leaves with the dipping sauce on the side.
