90 g icing sugar
300 g unsalted butter
2 eggs
lemon essence
375 g flour

Instructions

1.Preheat the oven to 170C and line a baking tray with parchment paper
2.In a bowl, beat the icing sugar and unsalted butter together until creamy
3.Beat in the eggs and a few drops of lemon essence
4.Sift in the flour and mix until just combined
5.Spoon the mixture into a piping bag fitted with a star nozzle
6.Pipe the biscuits onto the prepared baking tray in a swirl shape
7.Bake for 12-15 minutes or until lightly golden
8.Leave the biscuits to cool for 5 minutes before transferring them to a wire rack to cool completely
