Ingredients

24 tomatoes
8 onions
3 -4 lebanese cucumbers ( or one large burpless cucumber , or a couple of ordinary cucumbers , but , because you need to use the )
1 1/2 ounces salt
2 lbs sugar ( white , brown or half white or half brown )
0.5 bottle malt vinegar or ( 1687 ml ) bottle white distilled vinegar
3 tablespoons mustard
3 teaspoons cayenne pepper
6 tablespoons flour ( for thickening )
3 tablespoons curry powder ( use Clive of India if available )

Instructions

1.Peel and chop tomatoes, onions, and cucumbers. Put them in a large pot and add salt. Let it sit overnight.
2.Rinse with cold water and drain. Add sugar, vinegar, mustard, cayenne pepper, and curry powder to the pot and mix well.
3.Bring the mixture to a boil, then let it simmer for about 2 hours or until the mixture is thickened.
4.Mix flour with a little water and add it to the pot to thicken the mixture even more. Cook for a few more minutes and stir frequently.
5.Remove the pot from heat and let it cool before putting it in sterilized jars. Store in the fridge.
