Victorian Era Fish Cakes were a staple food during the 19th century in England. They were a popular way to use up leftover fish and vegetables, and were often made by housewives to feed their families. Traditional fish cakes were made with salt cod, but this recipe uses any firm, white-fleshed fish. This hearty meal is perfect for lunch or dinner and can be served with a side salad for a complete and balanced meal.

Instructions

1.In a large pot, add enough water to cover the vegetables and bring to a boil. Add the carrot, onion, celery, bay leaf, leeks, and parsley. Simmer for 5-7 minutes or until the vegetables are tender.
2.Add the fish to the pot and cook for 10-12 minutes or until the fish is fully cooked.
3.Remove the fish and vegetables from the pot and let cool.
4.Flake the fish and mash the vegetables. In a large bowl, mix together the fish, mashed vegetables, eggs, milk, butter, salt (optional), white pepper, dry mustard, Worcestershire sauce, and panko breadcrumbs.
5.Form patties from the mixture.
6.Heat the olive oil in a large skillet over medium-high heat. Once hot, add the fish cakes to the skillet and cook for 4-5 minutes per side or until golden brown.
