Ingredients

2 lbs beef tenderloin ( I have used several types of beef including ground beef with very good results )
1/2 cup butter or 1/2 cup margarine , divided
4 medium onions , thinly sliced
1 1/2 lbs mushrooms , thinly sliced
1 can tomato paste
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 can full sherry wine ( use the empty tomato paste can ) or ( 6 ounce ) can wine ( use the empty tomato paste can )
1 pint sour cream
2 tablespoons flour
12 ounces extra broad egg noodles
salt , for water
1 tablespoon poppy seed
2 tablespoons finely chopped parsley

Instructions

1.Preheat the oven to 425 degrees.
2.In a large skillet, heat 2 tbsp butter over medium-high heat until melted. Add the onions and sauté until golden brown. Stir in the mushrooms, tomato paste, salt, and pepper. Cook until the mushrooms are tender and the liquid has evaporated, about 10-15 minutes.
3.Add wine to the skillet and cook for an additional 5 minutes, stirring occasionally.
4.Cut the beef tenderloin into thin strips. In another skillet, melt 2 tbsp butter over high heat and brown the beef until no longer pink.
5.Combine the sour cream and flour and add to the mushroom mixture. Heat until the sauce thickens.
6.Cook the extra broad egg noodles according to package instructions, adding salt to the water. Drain and toss with 2 tbsp butter, poppy seed, and chopped parsley.
7.Serve the beef stroganoff over the poppy seed noodles.
