500 g chicken thighs , skin on
1 can chickpeas , drained
1 vegetable stock cube
390 g chopped tomatoes
28 g fresh parsley
ground cinnamon
1/2 teaspoon basil
1/2 teaspoon oregano
500 g couscous

Instructions

1.In a large saucepan over medium heat, heat the olive oil.

5.Add the chicken back into the pan, cover, reduce the heat to low, and simmer for 15-20 minutes until the chicken is cooked through.
6.In the meantime, prepare the couscous according to package instructions.
7.Serve the chicken and sauce over a bed of couscous.
