Ingredients

4 boneless pork chops
2 large onions ( halved and thinely sliced )
3 cloves garlic , minced
3/4 - 1 3/4-1 lb spaghetti or 3/4-1 lb angel hair pasta
2 cups white wine ( I 've used sweet & dry and liked them both )
2 cups water
salt
pepper
olive oil

Instructions

1.Season both sides of the pork chops with salt and pepper to taste. Heat oil in a large, heavy skillet over medium-high heat. Add the pork chops and sear on both sides until well browned. Set aside.
2.Add onion and garlic to the pan; cook and stir until tender. Pour in the wine and water and bring to a simmer, then nestle the pork chops back into the pan. Cover and reduce heat.
3.Allow the chops to cook to an internal temperature of 145°F, about 15 minutes.
4.Bring a large pot of salted water to a boil. Cook pasta until it is tender but still firm to the bite. (about 12-14 minutes for spaghetti and 4-5 minutes for angel hair). Drain well.
5.To serve, plate one serving of pasta and one pork chop next to it with some onions and sauce. Sprinkle fresh herbs to finish.
