Ingredients

7 ounces uncooked vermicelli
3 medium tomatoes , seeded , chopped
1/2 cup shredded fresh parmesan cheese
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh chives
2 tablespoons vegetable oil
1/2 teaspoon salt
1/2 teaspoon lemon , rind of , finely grated
1/8 teaspoon ground black pepper
2 garlic cloves , minced
Vermicelli with fresh tomatoes and herbs is a simple and easy to make main course meal that is perfect as a quick lunch or dinner meal. This dish is light and flavorful, making it perfect for warm weather, however you can enjoy it any time of the year. Instructions

1.Cook the Vermicelli pasta according to package instructions and then rinse under cold water until cooled.
2.Add all of your chopped tomatoes, shredded fresh parmesan cheese, chopped fresh basil, chopped fresh chives, vegetable oil, salt, lemon rind, ground black pepper and minced garlic to a mixing bowl and mix everything together until thoroughly combined.
3.Once you have mixed everything together with the Vermicelli pasta, cover the mixing bowl with cling film and place in the fridge for at least 2 hours, allowing the flavors to combine.
4.To serve, simply remove the mixing bowl from the fridge, stir the pasta and serve. Add some more Parmesan cheese and fresh herbs on top as desired.
