200 g venus black rice
3 zucchini
150 g smoked salmon
3 teaspoons olive oil
1 scallion
oregano , as needed
salt , as needed
1 cup espresso white wine
Venus Rice with Smoked Salmon and Zucchini is a healthy and tasty dish made with black rice, smoked salmon, and fresh zucchini. Instructions

1.Rinse the Venus black rice several times using cold water, add the rice to a pot with 2 cups of boiling water and lower the heat to minimum, add salt and oregano and simmer for 25-30 minutes until tender and fully cooked.
2.While the rice is cooking, wash and slice the zucchini into small quarters. Heat olive oil in a pan over medium heat and sauté the zucchini for 5-7 minutes until golden brown.
3.Add smoked salmon to the pan and cook briefly, just for 1-2 minutes on each side until slightly crispy.
4.Mix the cooked Venus rice with smoked salmon and zucchini and toss over gently with a spoon.
5.Garnish with chopped scallions and serve hot.
