Ingredients

1 cup white rice
1 cup yellow lentils ( moong dal )
3 tablespoons ghee ( clarified butter ) , divided
salt to taste
4 cups water , or as desired
1 1/2 teaspoons coarsely ground black pepper
1/4 teaspoon cumin seeds
5 curry leaves
1 piece fresh ginger root , minced ( optional )
1/4 cup cashews ( optional )
Ven Pongal is a traditional South Indian breakfast dish that originated in the state of Tamil Nadu. It is made with rice and lentils and is often served with coconut chutney, sambar, or idli podi. It is a staple food in many South Indian households and is also popular in other parts of the country. Ven Pongal is rich in flavors and aromas and is a healthy way to start your day. Instructions

1.Rinse rice and lentils and soak them in water for 10-15 minutes. Drain the water and set aside.
2.Heat 1 tablespoon of ghee in a pressure cooker or a heavy-bottomed pot over medium heat.
3.Add rice, lentils, and salt to the pot and stir-fry for 2-3 minutes.
4.Pour 4 cups of water (or as you prefer), into the pot and stir well. Close the lid of the pressure cooker or pot.
5.Cook on high heat and let the pressure cooker whistle for 3 whistles. If you are using a pot, simmer on low heat for about 25-30 minutes, until the rice and lentils are cooked well.
6.Once the pressure cooker whistles, let it cool naturally for 10-15 minutes before opening the lid. Meanwhile, heat the remaining ghee in a separate pan.
7.Add black pepper, cumin seeds, curry leaves, ginger, and cashews to the pan. Fry until cashews turn golden brown. Pour this mixture on top of the cooked rice and lentils and stir well.
8.Serve hot with chutney or sambar.
