Ingredients

1 kg chicken , cut into medium sized pieces
1 teaspoon salt
2 teaspoons ginger-garlic paste
1/2 teaspoon turmeric powder
3/4 teaspoon chili powder
3 cups basmati rice
1 cup water , lukewarm
5 tablespoons olive oil
6 onions , thinly sliced
1 cinnamon stick
5 cloves
10 cashews , halved
1 tablespoon ginger paste
1 tablespoon garlic paste
3 cardamom pods
2 -3 bay leaves ( optional )
2 tablespoons mint leaves , chopped
6 tablespoons coriander leaves , chopped
1 teaspoon chili powder
1 teaspoon coriander powder
4 tomatoes , chopped
1 teaspoon salt
1 cup yoghurt , beaten well
One of the most popular South Indian dishes, Vellore Style Chicken Biriyani is a flavorful and spicy dish that is loved by people of all ages and regions. This dish is a classic example of a one-pot meal, where the chicken and the rice are cooked together with a variety of aromatic spices and herbs to create a flavorful and aromatic entree that is sure to satisfy your hunger. Instructions

1.In a large bowl, mix the chicken pieces with salt, ginger-garlic paste, turmeric powder, and chili powder.
2.Soak the basmati rice in lukewarm water for 30 minutes, then rinse and drain the rice.
3.In a large pot, heat olive oil and add thinly sliced onions, and fry until they are golden brown and crispy. Remove half of the fried onions from the pot and set aside.
4.To the remaining fried onions in the pot, add cinnamon stick, cloves, cashews, ginger paste, garlic paste, cardamom pods, bay leaves, chopped mint leaves, and chopped coriander leaves. Fry the mixture for 2-3 minutes.
5.Add chili powder, coriander powder, chopped tomatoes, and salt to the mixture and cook until the tomatoes are soft and mushy.
6.Add the marinated chicken pieces to the pot and cook for 10-15 minutes until the chicken is cooked through.
7.In a separate pot, cook the rice in 5 cups of water until it is three-quarters done. Drain the excess water, and spread the rice out on a large platter.
8.Pour the cooked chicken and its gravy over the rice, and top with the reserved fried onions.
9.Drizzle beaten yogurt over the biriyani, cover the pot with a tight-fitting lid and cook over low heat for 10-15 minutes or until the rice is completely cooked through. Serve hot with raita and papad.
