Ingredients

1 red bell pepper
1 medium onion
1/4 lb fresh mushrooms ( about 10-12 'shrooms )
2 cloves minced garlic
1 cup fresh spinach
1 package monterey jack cheese , shredded
salt
pepper
red pepper flakes
olive oil
2 -4 large flour tortillas ( I used the jalapeno-tomatoe flavored )
sour cream with cilantro
1 carton sour cream
2 tablespoons chopped cilantro
1/4 teaspoon curry curry powder

Instructions

1.Thinly slice the red pepper and onion.
2.Slice the mushrooms and mince the garlic.

6.Cook on medium heat until cheese is melted and tortilla is golden brown. Flip the quesadilla over and cook until both sides are crispy. Repeat with remaining tortillas and filling.
7.To make the cilantro sour cream, mix sour cream, chopped cilantro, and curry powder together in a small bowl. Serve with quesadillas.
