24 uncooked jumbo pasta shells
10 ounces vegetable broth
1 carrot , minced
1 potato , peeled and diced
1 onion , finely chopped
2 cups ricotta cheese
1 cup shredded mozzarella cheese
1 egg
1/2 cup grated parmesan cheese
1 teaspoon dried Italian seasoning
28 ounces spaghetti sauce

Instructions

1.Preheat oven to 375ºF.
2.Cook pasta shells according to package directions and drain.
3.Add vegetable broth to a large skillet and cook carrot, potato and onion over medium heat for 10-15 minutes, or until vegetables are tender.
4.Turn off heat and add ricotta cheese, shredded mozzarella cheese, egg, Parmesan cheese and Italian seasoning. Stir until well blended.
5.Pour spaghetti sauce into an ungreased 13-inch by 9-inch baking dish.
6.Fill cooked shells with cheese mixture and place in baking dish containing spaghetti sauce.
7.Cover and bake for 35-40 minutes.
