175 g firm tofu , cubed ( small packs )
2 tablespoons soy sauce ( I use Braggs )
2 tablespoons olive oil
1 tablespoon steak sauce ( HP Sauce works well )
1 tablespoon margarine ( such as Earth Balance )
1 onion , diced
1 celery rib , finely chopped
3 carrots , sliced
2 medium waxy potatoes , chopped into 1 inch pieces
3 garlic cloves , minced
1 bottle Guinness stout ( ours comes in 440 ml cans )
1 1/2 cups vegetable broth
2 -3 tablespoons flour ( start with 2 tbsp if you use reg flour )
1 tablespoon fresh thyme , finely chopped
1 teaspoon brown sugar ( optional )
salt and pepper
The Veggie Guinness Stew is a vegan version of the classic Irish beef stew, made hearty and flavorful with Guinness stout and a variety of vegetables. It's a perfect meatless option for St. Patrick's Day or any cold winter day when you need a warm and comforting meal. The marinade and roasting of the tofu give it a deliciously crispy texture that pairs perfectly with the savory and slightly sweet stew. Instructions

1.Preheat the oven to 400F. Then, in a bowl, toss the cubed tofu with the soy sauce, olive oil, and steak sauce.
2.Place the marinated tofu on a lightly greased baking sheet and bake for 20-25 minutes until golden brown and crispy.
3.Meanwhile, in a large pot, melt the margarine over medium heat. Once melted, add the diced onion, celery, carrots, and potatoes, stirring occasionally until softened.
4.Next, add the minced garlic and cook for another 1-2 minutes until fragrant.
5.Pour in the Guinness stout and vegetable broth, stir to combine, and bring to a boil.
6.Reduce heat to low, then whisk in the flour, thyme, and brown sugar until smooth.
7.Simmer the stew for 10-15 minutes until slightly thickened and the vegetables are tender.
8.Finally, stir in the baked tofu, salt, and pepper to taste.
9.Serve the stew hot with crusty bread or over mashed potatoes, if desired.
