Ingredients

2 medium carrots
1 medium zucchini

1 can corn , drained and rinse
1 can black beans , drained and rinsed
1 bunch fresh cilantro , finely chopped
6 ounces low-fat cheddar cheese , grated
6 whole wheat tortillas
2 cups plain nonfat yogurt
2 tablespoons canola oil

Instructions

1.Preheat oven to 375 degrees F.

8.Slice the quesadillas into wedges and serve with a dollop of plain nonfat yogurt on top.
