Ingredients

2 medium carrots
1/2 of a cabbage
1 yellow onion
8 shiitake mushrooms ( fresh or dried )
2 bunches cilantro
1 bunch of chinese broccoli , chopped into small stalks
3 stalks green onions , finely sliced
1/2 cup of diced water chestnut
250 g firm tofu
100 wonton wrappers ( the square kind ! )
250 g fresh egg noodles ( should be right next to the wrappers )
1/2 teaspoon white pepper
1/2 teaspoon sesame oil ( and a little more for drizzle )
1 teaspoon cornflour ( you can use cornstarch too )
1/2 teaspoon vegetable oil
1 pinch salt
The Vegetarian Wanton Soup is a healthy and flavorful meal that can be enjoyed at any time of the day. The soup is a Chinese classic, consisting of a nutritious vegetable broth, vegetables, tofu, egg noodles, and wontons - usually filled with minced shrimp or pork. This vegetarian version replaces meat with mushrooms and water chestnuts to give it a satisfying texture. The soup's lightness makes it a perfect choice for a light lunch or dinner.

Instructions

1.Soak dried shiitake mushrooms in hot water for 20 mins, drain off water. Cut off the stems and keep only the caps. Dice and keep aside.
2.Slice cabbage into thin strips. Grate the carrots and dice the onions.
3.In a large pot, boil 10 cups of water. Add cabbage, carrots, onions, green onions, and half of the cilantro. Boil on low heat for 45 mins.
4.In the meantime, dice water chestnuts and tofu. Mix together diced mushrooms, chestnuts, and tofu in a bowl.
5.Fill each wonton wrapper with a teaspoon of the mixture, and seal the edges.
6.In a separate pot, boil 6 cups of water. Add in the white pepper, sesame oil, and salt.
7.Once the water is boiling, add in the wontons, Chinese broccoli, and fresh egg noddles.
8.Boil for 10 mins or until noodles are cooked.
9.In a separate bowl, mix cornflour and water. Stir it into the soup until it thickens.
10.Drizzle a little sesame oil over each bowl of soup and top each bowl with some cilantro leaves before serving.
