Ingredients

1 poblano pepper , chopped ( about 3/4 cup )
1 medium sweet onion , chopped
2 garlic cloves , minced
1 tablespoon cooking oil
1 can kidney beans ( drained and slightly mashed )
1 can pinto beans ( drained and slightly mashed )
1 can V8 vegetable juice
1 tablespoon chipotle chile in adobo , chopped & seeded ( canned )
1/4 cup snipped cilantro
1 teaspoon chili powder
1 teaspoon cumin
1/2 cup yellow cornmeal
1/2 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1 egg
1/2 cup buttermilk
1 can chopped green chili peppers
2 tablespoons cooking oil
1/2 cup cheddar cheese ( grated )

Instructions

1.In a large skillet, heat the cooking oil over medium-high heat. Saute the poblano pepper, sweet onion and minced garlic for 5 minutes or until tender.
2.Stir in the kidney and pinto beans, V8 vegetable juice, chipotle chile in adobo, chili powder, cilantro, and cumin. Bring to a boil and reduce heat. Cover and simmer for 20 minutes.
3.In a mixing bowl, combine the cornmeal, whole wheat flour, baking soda and salt.
4.In a separate bowl, whisk the egg, buttermilk and green chilies. Add to the dry ingredients and mix well.
5.In a greased baking dish, spread the bean mixture evenly. Pour the cornmeal batter on top. Sprinkle the grated cheddar cheese over it.
6.Bake at 375 degrees Fahrenheit for 25-30 minutes or until lightly browned on top.
