Ingredients

1 spaghetti squash
2 -3 cups chopped vegetables ( I used red peppers , onions , and cauliflower , but others would work )
1 tablespoon olive oil
1/2 teaspoon oregano
salt & pepper
2 eggs
1/4 cup cream ( optional )
1 cup shredded cheese ( I used a combination of feta cheese and sharp cheddar , others would work too )

Instructions

1.Preheat oven to 400°F (200°C).
2.Cut the spaghetti squash in half lengthwise and remove the seeds and pulp.
3.Place the squash halves cut side down on a baking sheet.
4.Roast in the oven for about 25 minutes or until tender.
5.Let cool slightly before scooping out the flesh with a fork into a bowl.
6.In a large skillet, heat the olive oil over medium heat.
7.Add the chopped vegetables, oregano, salt and pepper. Cook until vegetables are tender, about 10 minutes.
8.In a separate bowl, whisk together the eggs and cream (if using) and stir in the cooked vegetables.
9.Spread the spaghetti squash evenly in a casserole dish.
10.Pour the egg mixture over the spaghetti squash.
11.Sprinkle the shredded cheese over the top.
12.Bake in the oven for about 25 minutes, or until the cheese is melted and bubbly.
