1 cup water , divided
2 cups plum tomatoes , diced
1 bay leaf
4 whole wheat pita bread , cut in half
1/2 cup Greek yogurt , plain
1 cup cucumber , thinly sliced
of fresh mint , chopped ( optional )

Instructions

1.In a medium-sized pot, heat olive oil over medium-high heat. Add onion and garlic, and cook until onions are translucent.
2.Add salt, black pepper, veggie burgers, and lentils, and stir together.
3.Add ground cumin, thyme, and 1/2 cup of water. Stir well.
4.Add diced tomatoes, bay leaf, and another 1/2 cup of water. Stir again.
5.Reduce heat to low and simmer for 30 minutes or until lentils are tender. Stir occasionally.
6.Remove the bay leaf and stir in the chopped mint (optional).
7.Assemble each half pita by filling it with lentil mixture, yogurt, and cucumber slices.
8.Serve and enjoy!
