4 cups water or 4 cups vegetable broth
1 large egg , beaten

2 1/2 cups grated mozzarella cheese , , divided
1 cup mushroom , sliced
1 medium green pepper , seeded and sliced
1 medium sweet red pepper , seeded and sliced
1 medium fresh tomatoes , , sliced
1 medium red onion , thinly sliced
1 tablespoon extra virgin olive oil
This vegetarian rice crust pizza is a healthy take on a classic comfort food. Instructions

1.Preheat the oven to 425°F.
2.In a large saucepan, bring rice and water (or vegetable broth) to a boil.
3.Reduce heat and let it simmer for about 18-20 minutes, or until cooked and tender.
4.Mix beaten egg, grated mozzarella cheese, and hot sauce with the cooked rice.
5.Spread the rice mixture into a greased pizza pan, shaping it into a crust.
6.In a small bowl, mix together tomato sauce, garlic, oregano, basil, Italian herbs, and black pepper. Spread over the rice crust.
7.Sprinkle 1 cup of grated mozzarella cheese on top of the sauce.
8.Add sliced mushrooms, green pepper, red pepper, tomato, and red onion.
9.Drizzle with olive oil and top with remaining 1 1/2 cups of grated mozzarella cheese.
10.Bake in preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
